1. Mr. Durant, a 75-year old man has been diagnosed with dysphagia. He has been noted to choke on liquids, but he swallows semisolid foods well. He has been admitted to the hospital for pneumonia. (5 Points)
What are some of the signs and symptoms of dysphagia? What types of modifications will be needed to feed him safely? What food properties would be safest for him? Discuss some safe swallowing guidelines for dysphagia patients. What are some common challenges for patients who have dysphagia?
2. Ms. Martin, a 55-year old woman has been diagnosed with gastroesophageal reflux disease (GERD). She is complaining of heartburn and pain that radiates behind her sternum. (5 Points)
What are the risk factors for GERD? What are the consequences of not treating GERD? Discuss the treatment of GERD including the diet and lifestyle modifications that can help alleviate symptoms.
3. Emily is a 5-year old female that has recently been diagnosed with Celiac Disease. You are helping to educate her family on the changes that will need to be made to her diet. (5 Points)
What is Celiac Disease? What are the symptoms of Celiac Disease? Discuss the guidelines of the diet for Celiac Disease. What are some tips that Emily’s family can use to look for when reading labels for foods that may contain gluten? Develop an example breakfast, lunch or dinner (1 meal) for her family, using Table 9-6. Make sure it is a complete meal (think about the MyPlate guidelines.) Do NOT copy a menu from the internet or another student, develop your own example.
